Buying while already abroad

Yes, and nothing changes. On airport or hotel Wi-Fi, open the app, pick your destination and plan, follow the auto setup, then turn on data roaming for the new line. It takes about a minute, and your plan starts when you connect, not when you bought it.

Two things make it easier. If your home SIM has mobile data abroad, you can add the plan without Wi-Fi; the download takes about a minute of your home carrier's data, so turn it off again straight after. And if you already have a KnowRoaming eSIM from an earlier trip, there's no setup at all: add a plan to it and switch it on. See Adding your plan without Wi-Fi: mobile data works too.

We still suggest adding the plan before you fly when you can. You land connected instead of hunting for Wi-Fi, and you check the settings calmly rather than in the arrivals hall. Your plan starts when you connect in a supported country, not when you buy. Your validity days count from that first connection. Unused data expires at the end of your validity period. It doesn't roll over.
