Does a region plan cover every country in it?

Not automatically. A regional plan covers a listed set of countries, and the list doesn't always match the map in your head. The Global plan isn't every regional plan combined, either. Check the plan's Where this eSIM works list against your route. If one stop isn't on it, add that country's own plan when you arrive, on the same eSIM.

The Europe plan covers 49 countries and switches networks by itself at every border. It includes the UK, Switzerland, Norway, and Turkey, which aren't in the EU. It also includes Jersey, Gibraltar, and the Isle of Man. It doesn't include Guernsey or Andorra; each is sold as its own destination. The Global plan covers 133 countries. A country in a regional plan isn't always in it.

You don't need a new plan for every country. You don't need to drop a regional plan because one stop is missing, either. Add that country's plan to the same eSIM when you get there, on any Wi-Fi, in about a minute. Your phone hands off between countries on its own. Your plan starts when you connect in a supported country, not when you buy. Your validity days count from that first connection. Unused data expires at the end of your validity period. It doesn't roll over.
