What happens to unused data when a plan expires
It doesn't carry over. Whatever is unused when the validity ends is gone, the way a hotel night you didn't use doesn't roll into your next stay. Unused data isn't refunded once a plan has started, either.

Your plan starts when you connect in a supported country, not when you buy. Your validity days count from that first connection. Unused data expires at the end of your validity period. It doesn't roll over.
If you tend to run under budget, a smaller plan with a top-up when you need it costs less than buying big and hoping to use it all; see Top up your plan: add data or days without a new eSIM. On an unlimited plan there's no balance to lose, only the days.
A plan that was bought and never connected is a different case, and it's refundable in full.
