A connection that comes and goes has one common cause and three real ones. The common one is your phone moving data back to your home SIM on its own. The real ones are handoffs between networks, the edge of coverage, and a data-saver mode holding apps back.
Open your SIM settings and confirm the KnowRoaming line is still the one selected for data. If it isn't, that's the whole problem: set it back, and on iPhone turn off Allow Cellular Data Switching. See Phone reverting to the home SIM automatically.
Restarts, updates, and iPhone's Allow Cellular Data Switching all do it. Data works while the KnowRoaming line is selected and stops when the phone flips back. Turn the setting off and re-select the line; see Use your KnowRoaming plan for data instead of your home SIM.
On foot, on a train, or in a car, the phone hands off between towers constantly, and each handoff is a brief gap. On a regional plan, a border crossing is a longer one while the phone registers on the next country's network. Give it a minute after you cross.
Some spots sit right at the limit, connecting and dropping rather than failing cleanly. A street over, a window, or a step outside usually settles it.
Both hold back apps on mobile data, so some things load and others quietly don't. Turn them off for the KnowRoaming line while you travel.

Since an eSIM functions similarly to a traditional SIM, your service provider may swiftly deactivate your service in the event that you misplace or have your device stolen. Do not hesitate to contact them immediately.
Be sure that your network plan allows for using it as a Personal Hotspot and that your provider has enabled it if you are unable to locate or activate it. To reconnect another device to Personal Hotspot, you must first restart both the iPhone or iPad that is providing the service and the second device. Verify that you are using the most recent version of Apple's iOS or iPadOS.
